Blanc de Blancs – LYS
The pure culmination of glorious moments
This Blanc de Blancs, made from the finest Chardonnays of the Champagne region is produced in very limited quantities so that it offers to each release a unique and genuine nectar.
Tasting Notes
Appearance : this wine unveils a light golden color with hints of straw yellow. It displays a fine and delicate thread of bubbles which promises a great balance.
Nose: characteristic of the Chardonnays from the Côte de Blancs, which have been aged in the cellar, the nose reveals primary aromas of white flowers and dried fruits which quickly evolve into more compote-like notes of brioche and grilled almonds.
Palate: the texture is silky and captivating. The chardonnays are dominated by the chalk from which they come from and display a fine balance of toasted and salty notes. A return of dried fruits and caramelized apples is followed by a more complex structure, with notes of butter and candied fruits. When opened even more, the wine develops some tertiary aromas.
Food and wine pairing:
Being considered as a gastronomic wine, LYS is a cuvée that goes well with poultry in sauce. Roger Desivry also enjoyed it with a sea bass cooked in salt crust.
